Maple Cake

Ingredients:
- 4 tbsp cup (20mL) soft butter
-1 cup (250mL) sugar -1 egg
-1 3 / 4 cup (430ml) all-purpose flour
-1 c. tablespoon (15mL) baking powder 1 pinch of salt
-1 / 2 c. tsp (2 mL) maple extract
-1 cup (250mL) milk

Almond praline:
-1 / 2 cup (125mL) maple syrup
-1 cup (250mL) sliced almonds

Whipped Cream:
-1 cup (250mL) cream 35% (I 1 ½ cups)
- 2 tbsp tablespoon (30mL) maple syrup
.
Preparation:
- Preheat oven to 350 F (180 BC).
- Butter an 8-inch round pan. (20cm) with removable bottom
- In a bowl, beat butter with sugar with a mixer electric.
- Add the egg and whisk until the mixture whitens
- In a bowl, sift the dry ingredients and add to above mixture alternating with the liquid ingredients.
- Mix with electric mixer for 2 minutes.
- Pour into pan and bake for 35-40 minutes or until a toothpick inserted in center comes out clean.
- Remove from oven and let stand 5 minutes to unmold onto a rack.
- Cool.
. Praline Almonds
:
- On medium heat in a skillet, heat the maple syrup with almonds, stirring until the syrup turns to sugar coated almonds and granulated.
- Remove from heat and let cool.

Whipped Cream:
- Whip cream until it forms soft peaks.
- Add maple syrup and whisk until stiff peaks form.
- Cut cake in half horizontally.
- Spread 2 / 3 of whipped cream and half the almonds on a piece of the pie.
- Place the second piece over the first.
- Spread remaining whipped cream and garnish with remaining almonds
